Potato Mash

Prior to new season potatoes it is sometimes difficult to obtain consistent good quality tubers late winter/early spring. Mash potato is a good standard, which all ages appreciate.

The cooking process is basic; boil potatoes in salted water, drain, add a dob of butter and mash introducing milk as required.

Mash potatoes can be enhanced further to compliment the other food it is to accompany. Use your imagination and consider introducing; pepper (white or black), chopped dried tomato, finely chopped spring onion +/or red capsicum, oven roasted garlic or a touch of curry powder.

You will no doubt have your own favourite flavours so treat yourself by upgrading a very traditional fare.

For decadent mash replace milk with cream cheese, sour cream and grated cheese.
