Tutaekuri

A traditional Maori potato normally available from January. Its distinctive purple/black colour encourages you to use it to bring dishes to life. Boil lightly, drain and allow to cool. Cut or slice over a green salad. Alternatively add to ordinary potatoes as part of a potato salad.

Do not hide this potato. It needs to be seen in all its glorious colour!
